Hi there! I figured the only way to start off a brand new food blog is to do so with a BANG! Now, I can assure you that these cookies probably won't explode, but they certainly are bangin'
XL Ultra Crispy Chocolate- Almond Cookies
- Ingredients
2 sticks of unsalted butter
1 1/2 cups of white sugar
1 large egg
1 tsp of vanilla extract
2 cups of all-purpose flour
1 teaspoon of baking soda
A generous pinch of salt
2 cups of semi-sweet chocolate chips
1 cup of whole almonds
-Method
Pre-heat your oven to 350 degrees Fahrenheit.
Take the room temperature butter and sugar and cream them in a metal bowl. (mix together until it becomes a pale paste.)
Add vanilla and egg and mix until combined.
Sift the flour and baking soda into the bowl and mix until well combined.
Roughly chop your almonds. (Chopping them yourself adds a better consistency to the cookies)
If your almonds are unsalted, add a pinch of salt to the bowl when you add the almonds.
Fold in the chopped almonds and chocolate chips.
Using an ungreased baking sheet, take a hefty tablespoon of dough and press it into the tray until it makes a flat circle. Keep cookies at least 2 inches from the edges of the pan and other cookies, as they will grow in the oven. I usually fit about 6 cookies per tray.
Bake for about 20 minutes, or until browned and slightly crisp on the sides.
Cool for 5 minutes on the tray, then allow to cool on a wire rack until completely cooled. They taste even better the next day- if you can wait until then!
